Richard Blais tested unsuspecting customers’ taste expectations by presenting them with a savory ice cream flavor. It wasn’t a favorite, to say the least, but it sure did prove a point: We expect ice cream to be sweet. But that doesn’t mean all ice cream flavors must be sweet — a little bit of salt goes a long way in making ice cream even more pleasurable to eat.
